This initiative marks a key step forward for Vietnam’s durian industry in deep-freeze preservation technology, injecting new impetus into further enhancing its international market competitiveness.

Liquid nitrogen rapid freezing technology is currently a leading technology in the international high-end fruit and vegetable preservation industry. It can rapidly reduce the core temperature of durian flesh to below -18°C, preserving its color, texture, and nutritional value to the greatest extent possible. Compared to traditional freezing methods, liquid nitrogen freezing effectively prevents ice crystals from forming and damaging the flesh cells, ensuring that even after thawing, the delicate texture and rich flavor of the fruit, close to fresh, are retained.
